Bacon Portabella Appetizers
- 4 large portabella mushrooms, rinsed with stem removed
- 2 medium ripe tomatoes
- 3 slices cooked bacon
- 14 cup shredded parmesan cheese
- pam olive oil flavored cooking spray
- salt & pepper
- chopped parsley
- spray portabello mushroom both sides with Pam.
- Place on baking sheet (I use foil for quick cleanup) lightly sprayed with Pam.
- On each mushroom, layer one tomato slice, 1/4 of bacon & parmesian cheese.
- Finsh with pepper to taste.
- place in 450 degree oven (or very gas grill) for about 7 minutes.
- Garnish with a little chopped parsly, if desired.
