Eggplant Fittah
- 1 large eggplanet
- 1/4 kg minced beef
- 1 large onion
- 1 cup yogurt
- 3 clove garlic
- 1 medium lemon
- 1 small black pepper
- 1 salt
- 1 shreds of pitta bread
- 1/4 cup tahini
- 1 pinch of pine
- Preheat the oven, and shred the pitta bread into small pieces.
- Put them in an oven tray until toasted.
- In a frying pan, add small amount of vegetable oil.
- Put the minced beef, season with pepper and salt, to taste, and keep stiring untill well done.
- Leave it aside.
- In a bowl, mix the yogurt, tahini, garlic and the squeeze of the lemon.
- That would be the sauce of tjis recipe.
- Cut the eggplant into small cubes then fry.
- Slice the big onion, then carmelize in a separate pan.
- In a large plate, arrange first the toasted bread, a layer of eggplant and a layer of minced beef then add the sauce of yogurt.On the top, put the caramelized onions and roasted pine.
