Chinese Broccoli with Garlic and Oyster Sauce

  1. Steam the greens over hot water.
  2. Meanwhile, peel and finely chop the garlic and shallots.
  3. Fry them for a minute or two in a little oil.
  4. Stir in the oyster sauce and the wine and bring to a boil.
  5. Let the resulting sauce cook down for a minute, maybe two, then pour it over the steaming-hot greens.
