Salsa Chicken
- 1 lb. boneless, skinless chicken
- breasts, cut into strips
- 1 pkg. (1-1/4 oz.) taco seasoning
- 2 tbsp. canola oil
- 1 can (14 oz.) diced tomatoes, undrained
- 1/3 cup peach preserves
- Cooked rice
- noodles
- Coat chicken strips with taco seasoning; saute in a large skillet until done.
- Stir in tomatoes and peach preserves; simmer for 10 minutes.
- Serve over hot rice or noodles.
