Monster Cookies
- 3 Eggs
- 1- 1/4 cup Brown Sugar
- 1 cup Sugar
- 1/2 teaspoons Salt
- 1 teaspoon Vanilla
- 12 ounces, weight Peanut Butter
- 1 stick Butter (soft)
- 4- 1/2 cups Quick Cooking Oatmeal
- 2 teaspoons Baking Soda
- 2 teaspoons Pumpkin Pie Spice
- 1/2 cups Mini M&m's (or You Can Double The Chocolate Chips)
- 1/2 cups Chocolate Chips
- 1/2 cups Craisins
- Preheat oven to 350 F.
- In a very large mixing bowl (or preferably your stand mixer bowl fitted with the cookie paddles), combine the eggs and sugars.
- Mix well.
- Add the salt, vanilla, peanut butter and butter.
- Mix well.
- Stir in the remaining ingredients and mix until combined.
- Using a medium size cookie scoop, drop dough on a parchment lined cookie sheet, spacing them about 2 inches apart.
- Bake for 11 minutes.
- Do not over-bake.
- Remove from oven.
- Let them cool for about 5 minutes on the cookie sheet before transferring to a wire rack to cool.
