Lavender-Scented Fruit Parfait Recipe
- 1 cup granulated sugar
- 1 tablespoon dried lavender buds
- Combination of diced stone fruits (such as peaches, plums, cherries, or nectarines) and berries (such as raspberries, blackberries, or strawberries)
- 1 cup heavy cream
- Crumbled amaretti biscuits
- To make lavender sugar, process 1 cup granulated sugar and 1 tablespoon dried lavender buds together until the sugar is purple-tinged and the lavender pieces are very fine.
- In a large bowl, prepare a combination of diced stone fruits (such as peaches, plums, cherries, or nectarines) and berries (such as raspberries, blackberries, or strawberries).
- Beat 1 cup heavy cream with 4 tablespoons lavender sugar in a chilled bowl until it holds soft peaks.
- In 4 tall parfait glasses, spoon a layer of flavored whipped cream into the bottom, cover with a layer of crumbled amaretti biscuits, then a layer of the fruit, and then repeat.
- End with a layer of the whipped cream.
- Chill for 30 minutes before serving garnished with a sprig of flowering lavender.
