Mostly Nonfat Au Gratin Potatoes
- 1 teaspoon butter
- nonstick cooking spray
- 1 medium onion, thinly sliced
- 2 tablespoons flour
- 2 cups nonfat milk
- 2 lbs potatoes (blue or golden, not russet)
- 8 ounces shredded nonfat cheddar cheese
- 14 teaspoon black pepper
- Preheat oven to 375 degrees.
- Coat 2-quart dish with spray.
- Wash, dry and then use a mandolin to thinly slice the potatoes.
- No need to peel the potatoes.
- Melt butter in large pan or pot.
- Add onion.
- Spray with nonstick spray.
- Cook, stirring occasionally, until onion is completely softened, about 5 minutes.
- Stir in flour, then slowly add milk.
- Add potatoes.
- Stir to mix.
- Bring to a boil.
- Stir in 6 oz.
- of the cheese and papper.
- Pour into prepared dish, spreading them out evenly.
- Bake for 1 hour uncovered.
- After 1 hour, cover with lid or foil and bake another 20 minutes.
- Remove from oven.
- Sprinkle with rest of cheese.
- Recover with lid or foil until cheese has melted.
- Serve.
