Canadian Bacon & Veggie Brunch Scramble

  1. Spray large skillet with cooking spray.
  2. Add mushrooms and onions; cook and stir on medium heat 5 min.
  3. or until onions are crisp-tender.
  4. Beat eggs and milk with wire whisk until well blended.
  5. Add to vegetable mixture; stir until well blended.
  6. Cook 2 min.
  7. or until egg mixture begins to set but top is still moist, stirring occasionally.
  8. Stir in Canadian bacon; cook an additional 2 min.
  9. or until egg mixture is set and no visible liquid remains, stirring occasionally.
  10. Season with pepper to taste; sprinkle with cheese.
  11. Place 1/2 cup of the spinach on each of four salad plates.
  12. Top evenly with egg mixture.
  13. Sprinkle with tomatoes.
