Sweet Potatoes with Blue Cheese and Bacon
- 4 whole Sweet Potatoes (Garnet Yams) Cleaned And Cut Into 1/4 Inch Rounds, Leave Skin On
- 1 Tablespoon Olive Oil
- 3 pinches Garlic Salt
- 3 pinches Cracked Black Pepper
- 3 pinches Smoked Paprika
- 3 pinches Dried Thyme
- 8 ounces, weight Blue Cheese, Crumbled
- 8 ounces, weight Cooked And Crumbled Bacon - I Like Organic, Nitrate Free Pork Or Turkey Bacon
- 1/4 cups Chives, Snipped For Garnish
- Preheat oven to 425 F with rack(s) in the middle.
- Prepare baking sheet(s) with parchment paper or Silpat.
- Toss sweet potatoes with olive oil and seasonings.
- Adjust seasonings to taste preference.
- Arrange in a single layer on baking sheet(s).
- Bake for about 25-30 minutes until sweet potatoes are golden brown and softened.
- Take potatoes out of the oven, put the rack in lower half of the oven and set temperature to low broil.
- Top each sweet potato round with blue cheese and bacon crumbles.
- Broil until the cheese is bubbling and melted.
- Let cool on baking sheets on racks and top with snipped chives.
- Variations:
- Change up the seasoning of your sweet potatoes with curry powder, Chinese five spice, chili powder, basil, rosemary, Cajun seasonings or whatever you choose.
- If desired, you can replace the blue cheese with your favorite cheese.
