Cherry chicken with carrots
- 2 1/4 lb chicken thighs, boneless and skinless
- 2 1/2 cup chopped carrots
- 2/3 cup dried cherries
- 1 tsp paprika
- 1 tsp seasoned salt
- 1/4 cup honey
- 1/2 tsp ground sage
- 12 oz cola I used Pepsi cola
- 1 1/2 pints chicken broth
- Add chicken, chicken broth, paprika, seasoned salt, cherries, ad sage and simmer 10 minutes.
- Add carrots.
- Cover simmer 25 minutes.
- Add honey stir in bring to boil then simmer 15 minutes uncovered.
- Break the chicken up up just a bit.
- Add cola and let reduce.
- About 10-15 minutes.
- Let sit 5 minutes.
- Serve hope you enjoy!
