Huevos Rancheros Casserole

  1. Preheat the oven to 350F.
  2. Lightly spray a 9-inch square baking pan with cooking spray.
  3. Set aside.
  4. In a small nonstick skillet, cook the sausage over medium-high heat for 3 minutes, stirring to break up the pieces.
  5. Stir in the pepper.
  6. Cook for 1 to 2 minutes, or until the pepper is tender and the sausage is no longer pink.
  7. Spoon into the baking pan.
  8. Top, in order, with the tortillas, beans, and tomatoes.
  9. In a medium bowl, whisk together the milk and egg substitute.
  10. Pour over the casserole.
  11. Bake for 45 minutes, or until the center is set (doesnt jiggle when the casserole is gently shaken).
  12. Sprinkle with the olives.
  13. To make the casserole ahead of time, assemble as directed, then cover and refrigerate, unbaked, for up to 12 hours.
  14. Remove from the refrigerator 15 minutes before baking.
