Ham 'n' Cheddar Cups
- 2 cups all-purpose flour
- 14 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 14 teaspoon pepper
- 6 eggs
- 1 cup milk
- 12 lb cooked ham, cubed
- 12 lb sliced bacon, cooked and crumbled
- 1 small onion, finely chopped
- In a bowl, combine the flour, sugar, baking powder, salt and pepper.
- Beat eggs and milk; stir into dry ingredients until well mixed.
- Stir in ham, cheese, bacon and onion.
- Fill well-greased muffin cups 3/4 full.
- (Paper-lined muffin cups are not recommended because the muffins will stick to them).
- Bake at 350 degrees for 45 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing to a wire rack.
