Wonderfully Great Tomato Soup

  1. Roughly chop the onion and saute until glassy in olive oil.
  2. Roughly chop the tomatoes and add to the onions.
  3. Stir, add some salt.
  4. Add optional herbs (basil, chive, garlic, etc.
  5. ).
  6. Cook, covered, on low heat for about an hour.
  7. Stir occasionally.
  8. Puree with immersion blender.
  9. Blend in Balsamic vinegar.
  10. Serve hot, at room temperature or cold, plain or with creme fraiche.
