Wonderfully Great Tomato Soup
- 1 onion
- 1 teaspoon olive oil
- 3 lbs tomatoes, mixed varieties
- 12 teaspoon kosher salt
- 4 leaves basil
- 1 teaspoon balsamic vinegar
- 1 teaspoon creme fraiche
- Roughly chop the onion and saute until glassy in olive oil.
- Roughly chop the tomatoes and add to the onions.
- Stir, add some salt.
- Add optional herbs (basil, chive, garlic, etc.
- ).
- Cook, covered, on low heat for about an hour.
- Stir occasionally.
- Puree with immersion blender.
- Blend in Balsamic vinegar.
- Serve hot, at room temperature or cold, plain or with creme fraiche.
