Dorothy Mickan's German Potato Salad Recipe
- 5-6 med. potatoes, boiled in jackets
- 1 med. onion, minced
- 1/2 c. vegetable oil
- 1/2 c. white vinegar
- 2 tbsp. salt
- 2 tbsp. pepper
- 1/2 c. hot water
- Boil potatoes, peel and slice while hot.
- Heat oil and cooked, minced onions in oil till tender; pour into potatoes.
- Add in vinegar, salt, pepper and water; mix well and let stand several hrs.
- This salad keeps well in the refrigerator.
- More vinegar or possibly salt may be added.
- This recipe comes from Dorothy's grandparents and was passed down through the generations.
- It has been a real favorite at many family functions through the years.
