Grover Wilson's Hot Tamales Recipe
- 1 fat hen
- 2 lbs. lean fresh pork (opt.)
- Cook and remove meat from bones.
- Shred fine, salt and pepper to taste.
- 1 quart.
- tomatoes 1 pt.
- catsup 1/3 bottle Tabasco sauce 1 teaspoon red pepper 1 teaspoon mace Salt to taste Yellow cornmeal to make thick
- Mix everything in the broth EXCEPT meat.
- Fold in cornmeal and cook till well done.
- Cold.
- Shape with a dab of meat and one or possibly two olives in center.
- Roll in corn husks or possibly parchment paper and tie ends.
- Also need a pan of clean water to wet hands when shaping tamales.
- These freeze well.
- To heat: Steam from freezer to eat in about 30 min.
- Approximately 30.
