Grover Wilson's Hot Tamales Recipe

  1. Cook and remove meat from bones.
  2. Shred fine, salt and pepper to taste.
  3. 1 quart.
  4. tomatoes 1 pt.
  5. catsup 1/3 bottle Tabasco sauce 1 teaspoon red pepper 1 teaspoon mace Salt to taste Yellow cornmeal to make thick
  6. Mix everything in the broth EXCEPT meat.
  7. Fold in cornmeal and cook till well done.
  8. Cold.
  9. Shape with a dab of meat and one or possibly two olives in center.
  10. Roll in corn husks or possibly parchment paper and tie ends.
  11. Also need a pan of clean water to wet hands when shaping tamales.
  12. These freeze well.
  13. To heat: Steam from freezer to eat in about 30 min.
  14. Approximately 30.
