Chocolate Amaretto Tarts Recipe
- 1 (1 ounce.) sq. unsweetened chocolate
- 1/2 c. butter, softened
- 2 c. powdered sugar
- 1 tbsp. vanilla extract
- Dash of salt
- 4 egg yolks
- 3 tbsp. amaretto
- 1 1/2 c. whipping cream
- 1 1/2 tbsp. amaretto
- Tart shells (recipe follows)
- Sliced almonds, toasted (optional)
- Heat chocolate in a heavy saucepan over low heat, set aside.
- Cream butter gradually.
- Add in powdered sugar; beating at medium speed in an electric mixer till smooth.
- Add in chocolate, mixing till blended.
- Add in vanilla and salt; mix till blended.
- Add in egg yolks one at a time, beating after each addition.
- Add in 3 Tbsp.
- amaretto, one tsp.
- at a time, beating well after each addition.
- Beat whipping cream till soft peaks form.
- Gradually add in 1 1/2 Tbsp.
- of amaretto, mix till blended.
- Fold 1 c. whipped cream mix into chocolate mix.
- Fill cooled tart shells with chocolate filling.
- Refrigerate3 to 4 hrs or possibly till hard.
- Pipe or possibly dollop reserved whipped cream.
- Garnish with sliced almonds if you like.
- Yield 5 dozen tarts.
