Cheesy Chicken and Rice Skillet

  1. Heat dressing in large skillet on medium-high heat.
  2. Add chicken; cook 5 min., stirring occasionally.
  3. Add frozen vegetables, tomatoes and water; mix well.
  4. Bring to boil.
  5. Stir in rice; cover.
  6. Simmer on low heat 15 to 20 min.
  7. or until water is absorbed and chicken is done.
  8. Remove from heat.
  9. Top with VELVEETA.
  10. Let stand, covered, 5 min.
  11. Top with crushed crackers.
