Cheesy Chicken and Rice Skillet
- 1/4 cup KRAFT Zesty Italian Dressing
- 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 pkg. (10 oz.) frozen vegetable blend
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 1 cup water
- 1 cup long-grain white rice, uncooked
- 4 oz. VELVEETA, cut into 1/2-inch cubes
- 15 RITZ Crackers, coarsely crushed
- Heat dressing in large skillet on medium-high heat.
- Add chicken; cook 5 min., stirring occasionally.
- Add frozen vegetables, tomatoes and water; mix well.
- Bring to boil.
- Stir in rice; cover.
- Simmer on low heat 15 to 20 min.
- or until water is absorbed and chicken is done.
- Remove from heat.
- Top with VELVEETA.
- Let stand, covered, 5 min.
- Top with crushed crackers.
