Peppermint Mocha

  1. In a small saucepan, combine water and sugar.
  2. Bring to a boil.
  3. When sugar is dissolved, reduce to a simmer, add peppermint extract and simmer 20 minutes.
  4. (This makes enough for 6 drinks!
  5. ).
  6. In a warmed mug, combine cocoa mix and water, stirring to form a paste.
  7. Add the espresso, 1/2 Tbsp of peppermint syrup and the milk.
  8. Stir until well combined.
  9. Top with whipped cream if desired.
