Grilled Chicken with Green Chiles and Cheese
- Olive oil spray
- 4 boneless, skinless chicken breast halves (about 4 ounces each), all visible fat discarded
- 1 teaspoon chili powder
- 1/4 cup canned diced green chiles, rinsed if desired, drained
- 1/4 cup shredded low-fat Cheddar cheese (about 1 ounce)
- Preheat the grill on medium high.
- Spray one side of the chicken with the olive oil spray.
- Sprinkle with half the chili powder.
- Turn over.
- Repeat.
- Grill the chicken with the smooth side down for 4 to 5 minutes.
- Turn over.
- Spread the green chiles on the chicken.
- Sprinkle with the Cheddar.
- Grill for 4 to 5 minutes, or until the chicken is no longer pink in the center.
