Olive and Pork Loaf

  1. Preheat oven to 375 degrees.
  2. Grease a 4 by 12 loaf pan with 2 teaspoon of oil.
  3. Line bottom with parchment.
  4. Brush with 1 teaspoon oil and set aside.
  5. Slice procuitto into strips.
  6. Mix flour and yeastin a large bowl.
  7. Add wine then eggs 1 at a time.
  8. Mix well after each addition.
  9. Stir in cheese, pork and olives.
  10. Transfer to pan and bake for 1 hour.
  11. Invert loaf onto a rack, peel pff parchment and cool.
