Brunch Enchiladas
- 12 oz. cubed ham
- 1/2 c. chopped green onions
- 1/2 c. chopped green peppers
- 2 1/2 c. shredded Cheddar cheese
- 6 beaten eggs
- 2 c. half and half
- 1 Tbsp. flour
- 1/4 tsp. garlic powder
- few drops Tabasco sauce
- 8 (7-inch) flour tortillas
- Combine ham, onion and green pepper.
- Place 1/3 cup ham mixture and 3 tablespoons cheese on tortilla.
- Roll up and place filled tortillas, seam down, in 9 x 13-inch greased baking dish. Combine eggs, half and half, flour, garlic and Tabasco.
- Pour over tortillas.
- Cover and refrigerate overnight or several hours. Bake, uncovered, in 350u0b0 oven for 45 to 50 minutes.
- Top with remaining cheese.
- Bake 4 more minutes.
- Let stand 10 minutes. Serve.
- Serves 6 to 8.
