Sophie's honey chilli roasted carrots

  1. Preheat the oven to 180C.
  2. Roughly chop your carrots into large, long chunks - about the width and length of an average thumb is good.
  3. In a bowl, mix your honey, olive oil, lemon juice and garlic power.
  4. Put the carrots into an oven dish and pour the honey mixture over them.
  5. Roll them around to ensure they are covered in a thin layer.
  6. Throw your chili flakes over the top.
  7. I used about 2 teaspoons worth.
  8. Bake uncovered for 25-30 minutes.
  9. Serve and enjoy!
