Dilled Carrot Soup
- 3 cups chicken broth
- 1 (14 1/2 ounce) can diced tomatoes
- 1 lb carrot, sliced
- 1 12 cups chopped onions
- 1 medium idaho potato, peeled and cubed
- 2 garlic cloves, minced
- 1 12 teaspoons dill
- 2 -3 tablespoons lemon juice
- salt and pepper
- 6 tablespoons plain yogurt
- Combine all ingredients, except lemon juice, salt, pepper and yogurt in slow cooker.
- Cover and cook on high 3-4 hours.
- Process soup in food processor or blender until smooth.
- Season to taste with lemon juice, salt and pepper.
- Serve soup warm or chilled and garnished with a dollop of yogurt.
