Sweet Potato Souffle

  1. Beat potatoes until light.
  2. Beat in milk and butter until butter melts.
  3. Beat in bourbon, egg yolks, nutmeg and pepper.
  4. Fold in egg whites.
  5. Spoon mixture into greased 6- to 8-cup casserole.
  6. Bake at 375 degrees for 35 to 40 minutes.
