Citrus Rum Chicken
- 4 chicken breasts
- 14 red bell pepper
- 14 green bell pepper
- 12 white onion
- 4 ounces Diet Coke
- 3 slices lemons
- 15 baby carrots
- 1 (6 ounce) can pineapple chunks in juice
- 2 dashes rum
- 2 tablespoons honey (sugar-free)
- 14 cup Splenda granular
- 2 tablespoons brown sugar
- 5 tablespoons light soy sauce
- Cut up veggies in small pieces, not carrots.
- Cut white onion in bite size pieces.
- Cut chicken up into 1 inch pieces.
- Place lemon slices on bottom of crock pot with carrots and onion and pineapple, lay chicken over that and add.
- Remaining ingredients in crock pot.
- Stir together, and let soak in fridge over night.
- Cook on low for up to 6 hours, or on high for 3 hrs (every crock pot is different).
- Enjoy with white rice or brown rice.
