Pork, Eggplant And Tomato

  1. Prepare ingredients.
  2. Marinate pork in salt and soya sauce for 5 minutes.
  3. Heat oil up in wok to smoking point.
  4. Add pork and onions.
  5. Stir fry pork until browned, about 5 minutes.
  6. Add eggplant, tomatoes, and sugar.
  7. Cover wok.
  8. Cook ingredients for 15 minutes.
  9. Lift cover occasionally to stir ingredients.
