Quick Fava Bean Soup

  1. Heat the oil in a 6-quart pot over medium-high heat.
  2. Add the onion and garlic and saute until the onion is golden.
  3. Add the beans, squash, stock, tomatoes, bacon, herb seasoning, and vinegar.
  4. Cover and bring to a boil.
  5. Reduce the heat and simmer until the squash is tender, about 15 minutes.
  6. Taste and season with salt and pepper if needed.
