Southwest Spaghetti Pie
- 8 ounces, weight Spaghetti Noodles
- 1 whole Egg
- 1/2 cups Low Fat Milk
- 2 pounds Pork Sausage
- 1 whole Large Onion, Chopped
- 1 whole Large Green Pepper, Chopped
- 2 cloves Garlic, Chopped
- 1- 1/2 Tablespoon Chili Powder
- 1/2 teaspoons Cumin
- 1/2 teaspoons Mexican Oregano
- 1/2 teaspoons Pepper
- 1 can (16oz) Tomato Sauce
- 6 ounces, weight Pepper Jack Cheese, Grated
- 6 ounces, weight Cheddar Cheese, Grated
- Preheat oven to 425 degrees F.
- Cook pasta according to package directions, then drain.
- Whisk together egg and milk, and mix it into the hot pasta.
- Spread the mixture into a greased 9x13 baking pan.
- Cook the sausage, onion, green pepper and garlic in a skillet over medium heat until sausage is cooked and slightly browned.
- Drain off any fat.
- Return to heat and add chili powder, cumin, oregano and pepper, cook for 2 minutes.
- Stir in tomato sauce and cook 2 minutes more.
- Then, remove from heat and check to see if it needs salt(I did not put an amount for salt because it depends on what brand of sausage and chili powder you use as to how much salt will come from those ingredients).
- Spread meat mixture over pasta and top with both cheeses.
- Place your baking dish in the preheated oven and bake for about 15 minutes or until cheese has melted.
- Remove from oven and let stand 5 minutes before serving.
- Note: This can be assembled several hours ahead of time and refrigerated.
- Just remove it from the refrigerator about 15 minutes before baking.
- Bake at 350 degrees F for about 25 minutes or until heated through and cheese is melted.
- Note about the sausage: I use R.B.
- Rices, it seems to be a lean sausage and you can use mild, medium or hot depending on your taste.
