Hoppin' John Recipe

  1. In a large heavy saucepan, cook bacon over medium high heat till brown, but not crisp.
  2. Add in onion and cook till wilted.
  3. Add in rice and cook 1-2 min over high heat till translucent/soft and starting to parch.
  4. Add in can liquid and water, followed by the black-eyed peas.
  5. Add in thyme and bring to a boil, turn heat to simmer and cook till done, 15-20 min.
  6. Add in parsley and fluff.
  7. Turn heat off and let sit for 10-20 min and serve.
