Pecan Oven-Fried Chicken
- 1 cup Buttermilk Biscuit Mix (such As Bisquick)
- 13 cups Finely Chopped Pecans
- 2 teaspoons Paprika
- 1/2 teaspoons Salt
- 1/2 teaspoons Poultry Seasoning
- 1/2 teaspoons Dried Sage (I Am Not A Big Fan Of Sage So I Only Use 1/4 Tsp.)
- 2- 1/2 pounds Fryer Chicken, Cut Up, Or Use 4 To 6 Boneless, Skinless Chicken Breasts
- 1/2 cups Evaporated Milk
- 13 cups Butter Or Margarine, Melted
- Preheat oven to 350F.
- In a shallow dish, combine biscuit mix, pecans and seasonings; mix well.
- Dip chicken pieces in evaporated milk; coat generously with pecan mixture.
- Place chicken in a lightly greased 13 x 9 x 2 inch baking dish.
- Drizzle butter over chicken.
- Bake, uncovered, for 1 hour, or until chicken is done.
