Cheesy Arancini Rice Balls
- 1/2 medium Green pepper
- 1/2 medium Onion
- 1/2 cup Parmesan cheese
- 2 cup Rice
- 3 Eggs
- 1 cup Italian bread crumbs
- 1 1/2 cup Mozz cheese
- 1 Vegtable Oil
- Cook Rice fully as directed on box
- When rice is cooked mix one egg, the parmesan cheese, mozz cheese, the chopped peppers and onions in with rice
- Let cool
- Fill pan with vegtable oil about four inches deep and heat
- When rice has cooled, make the rice into balls
- Whisk the last two eggs in seperate bowl.
- Then put bread crumbs in another seperate bowl
- Dip rice ball in the eggs, then dip it in the bread crumbs, then put in vegtable oil
- Repeate till all the balls are in the vegtable oil.. Should make about eight balls.
- Keep balls in vegtable oil untill they turn brown.
- I like to keep mine in longer to get a crunchier outside.
- Take out the balls let them cool and enjoy!
- You can also eat these with marinara sauce which is really good!
