Gefulte Lebkuchen
- 250 grams Honey
- 120 grams Sugar
- 1 tsp Cloves
- 1 1/2 tbsp Cinnamon
- 500 grams Flour
- 2 large Eggs
- 3 ml Bicarbonate of Soda
- 75 grams Butter
- 180 grams Nuts (finely chopped)
- 2 large Eggs
- 105 grams Sugar
- 90 grams Mixed Peel
- Boil up honey, sugar & spices
- Cool and when cool enough, add melted butter, beaten eggs
- Add bicarb mixed with a little cold water
- Add flour in aliquots
- Allow to stand overnight
- Divide into 2 portions and roll out approximately 2mm thick
- Place one portion on a greased swiss roll pan
- Spread filling over first layer, then sandwich with the other dough portion rolled out
- Press down a little and prick with a fork
- Bake at 180 for 25 minutes
- When cold, cut into squares.
- Coat all over like a petit four if you can with glace chocolate icing.
- Roll in nuts to finish
