Chipotle Potato Salad
- 2 pounds new potatoes small
- 1 tablespoon olive oil
- 1 x salt and black pepper to taste
- 1 cup yogurt, plain low-fat
- 1/2 cup cilantro chopped
- 3 each scallions, spring or green onions sliced
- 1 each sweet yellow bell peppers chopped
- 1 each chipotle chili peppers chopped
- 1 tablespoon dijon mustard
- 1 teaspoon lime juice
- Preheat oven to 450 F degree.
- Toss potatoes with oil, salt and pepper.
- Roast for 15 to 20 minutes or until tender and golden.
- Remove from oven and allow to cool slightly.
- Mix yogurt, cilantro, onions, yellow and chipolte peppers, mustard and lime juice.
- Add potatoes and mix until combined.
- Season to taste with salt and pepper.
- Serve warm, chilled or at room temperature.
