Double Cheese Rice Flour and Potato Fritters in a Frying Pan

  1. Peel the potatoes, and remove any eyes.
  2. Wrap them in plastic wrap and microwave or boil until tender.
  3. I cook them wrapped in the rice cooker to save electricity.
  4. When the potatoes are tender, mash with a potato masher, add katakuriko, rice flour, and salt, mash them up and mix together.
  5. Next, add the cheese while the potatoes are still hot, and mix.
  6. When the consistency is about even, add the water, and knead with your hands.
  7. Roll up into balls, and fill with cheese.
  8. Be careful not to let the cheese spill out!
  9. Heat olive oil in a frying pan, then grill until both sides are golden brown.
  10. Turn off the heat, then let them sit for 1 to 2 minutes in the frying pan (to allow the cheese on the inside to melt in residual heat).
  11. They're done!
