Double Cheese Rice Flour and Potato Fritters in a Frying Pan
- 2 Potatoes
- 70 grams Katakuriko
- 30 grams Rice flour (or flour)
- 50 grams Pizza cheese
- 2 tbsp Water
- 1 pinch Salt
- 1 dash Olive oil
- 1 Cheese for filling
- Peel the potatoes, and remove any eyes.
- Wrap them in plastic wrap and microwave or boil until tender.
- I cook them wrapped in the rice cooker to save electricity.
- When the potatoes are tender, mash with a potato masher, add katakuriko, rice flour, and salt, mash them up and mix together.
- Next, add the cheese while the potatoes are still hot, and mix.
- When the consistency is about even, add the water, and knead with your hands.
- Roll up into balls, and fill with cheese.
- Be careful not to let the cheese spill out!
- Heat olive oil in a frying pan, then grill until both sides are golden brown.
- Turn off the heat, then let them sit for 1 to 2 minutes in the frying pan (to allow the cheese on the inside to melt in residual heat).
- They're done!
