Kale Salad
- 2 bunches kale
- 1 large red onion, thin slice
- 3 garlic cloves, pressed
- 8 brown button mushrooms, tops only sliced (can use white button)
- 8 cherry tomatoes, cut in half
- 1 small tart apple, cut into matchsticks
- 12 cup extra virgin olive oil
- 2 tablespoons Dijon mustard
- 14 teaspoon kosher salt (optional)
- 3 limes
- fresh ground pepper (optional)
- TO MAKE:.
- Wash kale well and dry between towels.
- Remove tough stems.
- Slice or tear apart and place in salad bowl.
- In small bowl, whisk together, garlic, mustard, salt, pepper, and olive oil.
- Add the juice of one lime to this and whisk to make dressing.
- Place onions, mushrooms and apple with kale greens.
- Pour dressing over and toss.
- Refrigerate until ready to serve.
- TO SERVE:.
- Add sliced tomatoes just before serving.
- Squeeze two limes over salad and toss.
- Now -- ENJOY!
