Kale Salad

  1. TO MAKE:.
  2. Wash kale well and dry between towels.
  3. Remove tough stems.
  4. Slice or tear apart and place in salad bowl.
  5. In small bowl, whisk together, garlic, mustard, salt, pepper, and olive oil.
  6. Add the juice of one lime to this and whisk to make dressing.
  7. Place onions, mushrooms and apple with kale greens.
  8. Pour dressing over and toss.
  9. Refrigerate until ready to serve.
  10. TO SERVE:.
  11. Add sliced tomatoes just before serving.
  12. Squeeze two limes over salad and toss.
  13. Now -- ENJOY!
