Ill Have Seconds Please Poppy Seed Chicken Casserole

  1. Preheat oven 350
  2. Cook chicken breasts through and cube them.
  3. Place in the bottom of a greased casserole dish.
  4. Mix sour cream, cream of chicken soup, cream cheese, and poppy seeds (1 tsp).
  5. Pour mixture on top of chicken.
  6. *Danger Alert* The cream cheese makes this really, really creamy.
  7. If youre using a smaller casserole dish, you may want to cut it down to 1/4.
  8. Crush Ritz crackers finely.
  9. Combine with melted butter and sprinkle over the top of the casserole.
  10. Sprinkle remaining poppy seeds over top.
  11. Bake for approx.
  12. 40 minutes until bubbly!
  13. I rarely have left overs, but if I do this is great the next day for lunch next to a crisp salad and giant glass of sweet tea.
