Lemon Pie

  1. Mix sugar, cornstarch, flour and salt in medium bowl, reserving 1/2 cup sugar.
  2. Heat water to boiling in medium size pan.
  3. Lower heat.
  4. Add sugar mixture, stirring constantly for 5 to 7 minutes.
  5. Remove from heat.
  6. Beat egg yolks slightly in small bowl.
  7. Stir in 1/2 cup of sugar mixture.
  8. Stir back into mixture in pan and cook for 3 minutes.
  9. Remove and cool.
  10. Stir in lemon rind, juice and butter.
  11. Beat egg whites and lemon extract.
  12. Add reserved sugar, one tablespoon at a time until it stands in peaks. Put filling in crust.
  13. Put egg white mixture on top.
  14. Bake at 350u0b0 for 12 minutes.
  15. Cool completely.
