Chicken And Spinach Lasagna Recipe
- 5 lbs. chicken breast
- 5 lbs. spinach
- Shallots
- Garlic
- Chicken base
- Course grnd peppercorns
- 1/4 c. extra virgin olive oil
- Poach chicken breast in chicken stock and coarse chop.
- Saute/fry garlic and shallots in oil till translucent/soft.
- Add in chicken and briefly saute/fry.
- Drain oil off mix and set aside.
- Mix all cheeses for Ricotta mix; add in shallots, salt and pepper to taste.
- In a lasagna pan put down your first layer of pasta; spread cheese mix over, another pasta layer, chicken and spinach mix.
- Repeat till all ingredients are used.
- Wrap with foil and cook at 350 degrees for 45 min.
