Fruit and Roasted Vegetable Salad
- 1-2/3 cups navel orange segments
- 2 cups yellow beets, roasted, peeled, cubed
- 3/4 cup yellow squash, roasted, peeled and diced
- 6 Tbsp. fennel, roasted, diced
- 6 Tbsp. pearl onions, roasted, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 6 Tbsp. coarsely chopped walnuts, toasted
- 6 Tbsp. fresh parsley, chopped
- 2 Tbsp. dried cranberries
- 3 qt. mixed salad greens, torn
- 3/4 cup KRAFT Poppy Seed Dressing
- 2 Tbsp. goat cheese, crumbled Target 2 For $5.00 thru 02/06
- Combine all ingredients except salad greens, dressing and cheese in large bowl; cover.
- Refrigerate several hours or until chilled.
- Add greens and dressing just before serving; toss lightly.
- Sprinkle with cheese.
