Creamy Smooth Sweet Potato Bites
- 600 grams Sweet potato
- 70 grams Butter
- 90 grams Light brown sugar (or white sugar)
- 2 Egg yolks
- 6 tbsp Heavy cream (or half cream, half milk)
- 1 tbsp Rum (optional)
- 1 few drops Vanilla oil
- 1 Egg yolk for brushing
- Peel the sweet potatoes and cut into 3 cm chunks.
- Put into a pot and put in enough water to cover the potatoes.
- Turn on the heat and cook the potatoes.
- When you can easily poke a skewer through, they are done.
- Drain the potatoes and mash.
- While still warm, add the butter and sugar and mix well.
- Add the cream, rum, vanilla, and egg yolk and mix.
- Strain the mixture.
- It will become creamy.
- Preheat the oven to 190C.
- Put the mixture into a pastry bag.
- You can also spoon the mixture into the cups at this stage.
- Squeeze the mixture into containers or cups of your choice.
- Brush egg yolk on top if desired.
- This time, I didn't brush the egg yolk on.
- Once the oven is heated, bake for about 10-20 minutes.
- The baking time may vary due to the shape of your containers, so keep an eye on it and adjust as necessary.
- The finished product!
