Strawberry Daiquiri Pie
- 1-3/4 cups boiling water
- 1 pkg. (8-serving size) JELL-O Strawberry Daiquiri Flavor Gelatin
- 2 tsp. grated lemon or lime zest Safeway 3 ct For $1.00 thru 02/09
- 1/4 cup lemon or lime juice Safeway 3 ct For $1.00 thru 02/09
- 1 pt. (2 cups) vanilla ice cream, softened
- 1 ready-to-use graham cracker crumb crust (6 oz.)
- Stir boiling water into dry gelatin mix in large bowl at least 2 min.
- until gelatin is completely dissolved.
- Stir in lemon zest and juice.
- Add ice cream; stir until ice cream is completely melted and mixture is well blended.
- Refrigerate 15 to 20 min.
- or until mixture is very thick and will mound.
- Spoon into crust.
- Refrigerate 2 hours or until firm.
- Store leftover pie in refrigerator.
