Tomato Beef Stew Recipe
- 1 pound beef cubes
- 2 tbsp. flour (season flour with 1/2 teaspoon salt & 1/8 teaspoon pepper)
- 2 tbsp. shortening
- 1 can Campbell's tomato soup
- 1 soup can water
- 6 sm. onions
- 6 sm. carrots, cut in half
- 3 potatoes, quartered
- 1/4 teaspoon whole thyme
- Roll meat in flour.
- Brown in shortening in large heavy pan.
- Add in soup and water.
- Cover, simmer 1 1/2 hrs, stir now and then.
- Add in remaining ingredients.
- Cover, cook till vegetables are tender, about 1 hour.
- Cook uncovered for last 10 min to thicken.
- 4 to 6 servings.
