Vegetables with Grated Coconut Sambal (GUDANGAN)
- 100 gr young jackfruit, roughly chopped
- 75 gr carrots, shaved roughly
- 50 gr young melinjo leaves
- 50 gr green beans, cut into 3 cm
- 50 gr bean sprouts, remove the roots
- 1/2 of a bit old coconut, grated lengthwise
- 1 cm galangal, crushed
- 1 bay leaf
- 11 cayenne peppers (to taste)
- 4 cloves garlic
- 2 cm kencur
- 2 lime leaves
- 1 tsp brown sugar
- 3/4 tsp shrimp paste fried (if desired)
- 1 teaspoon salt
- Boil all the vegetables separately until cooked.
- Remove, drain and set aside.
- Blend all the spices.
- Add grated coconut, ginger and bay leaves.
- Steam until cooked (about 10 minutes) with banana leaves or plastic repose.
- Remove and set aside.
- Put vegetables in a serving dish, add the seasoning sauce of coconut.
- Serve with warm rice .
