Perfect Puerto Rican Rice
- 2 cups white long-grain rice
- 1 tablespoon canola oil
- 4 cups low-sodium chicken broth
- 1 tablespoon kosher salt
- 1/2 cup frozen sweet peas
- Place the rice in a fine mesh strainer and rinse under cold water until the water runs clear.
- Add the rice to a large saucepan with the oil, chicken broth and salt.
- Bring to a boil, cover, then reduce the heat to low and simmer for 30 minutes.
- Remove the pan from the heat, add the frozen peas, cover again and let sit for 15 minutes.
- Fluff with a fork and serve.
