Morel Pate

  1. In a medium skillet, over a high heat, melt the butter.
  2. Saute the morels and mushrooms 3 to 4 minutes.
  3. Add the thyme and shallots, and cook until translucent.
  4. Add Madeira and reduce.
  5. Season with salt and pepper.
  6. Cook until the mixture is fairly dry.
  7. Cool.
  8. Transfer mixture into a food processor and puree until smooth.
  9. Add sour cream and season to taste.
  10. Place in a crock and serve with toast points.
