Bajan Spice Paste (Barbados) Recipe
- 1/2 c. virgin extra virgin olive oil juice of 1 lime
- 2 Tbsp. packed thyme leaves, roughly minced
- 2 Tbsp. packed sage leaves, roughly minced
- 2 Tbsp. packed basil leaves, roughly minced
- 2 x cloves garlic, peeled and roughly minced
- 1 x Scotch bonnet chili, seeded and chopped
- 3 x scallions, chopped
- 2 sm inner stalks celery, chopped
- 1/2 tsp warm paprika
- 1/4 tsp grnd cloves
- 1/4 tsp grnd mace
- 1/4 tsp salt freshly grnd black pepper to taste

- To prepare Bajan spice paste, place oil, lime juice, herbs and garlic in a blender or possibly food processor, and blend till fairly smooth.

- Transfer to a mixing bowl and add in the chili, scallions, and celery.
- 3.
- Stir in the paprika, cloves, mace, salt, and pepper.
- Keep refrigerated.
