Cajun Pork Sliders
- 2 whole Andouille Sausage Links, Sliced
- 1 Tablespoon Olive Oil
- 1/2 whole Red Bell Pepper, Sliced
- 1/2 whole Yellow Bell Pepper, Sliced
- 1- 1/2 pound Ground Pork
- 1/4 Tablespoons Garlic Powder
- 1 teaspoon Cajun Seasoning
- 1/2 teaspoons Hot Sauce, Plus More To Serve (optional)
- 1/2 teaspoons Ground Thyme
- 1/2 cups Mayonnaise
- 12 Slider Buns
- In a heavy skillet, cook sausage for about 4-6 minutes or until casings begin to darken.
- Remove, slice into thin slices and set aside.
- Add olive oil to the same skillet.
- Saute peppers until they begin to soften, about 3-5 minutes.
- Set aside.
- In a bowl combine pork, garlic powder, Cajun seasoning, hot sauce (if using), thyme and salt and pepper.
- Shape pork into 12 small patties.
- Heat a stovetop grill pan.
- Place patties on grill pan and cook about 5-7 minutes per side or until pork has cooked through.
- To prepare sliders, slather mayo on each bun.
- Place one pork slider on the bottom of your bun, top with sliced sausage and 2-3 pepper slices.
- Serve with more hot sauce if desired.
