Salmon Canapes
- 1 can (7 3/4 oz.) red salmon, drained, boned and flaked
- 2 Tbsp. minced celery
- 2 Tbsp. minced green onion, including some tops
- 3 Tbsp. mayonnaise
- 1/2 tsp. lemon juice
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. liquid smoke
- thinly sliced cucumber
- crackers or toasted bread rounds
- thinly sliced green onions
- watercress sprigs
- In a small bowl, mix salmon, celery and minced green onion. Add mayonnaise, lemon juice, salt, pepper and liquid smoke.
- Mix well.
- Cover and chill at least 1 hour to develop flavor or up to 24 hours.
- Just before serving, place a cucumber slice on crackers or toast.
- Top with salmon mixture and garnish with green onion slices and watercress.
- Makes 1 cup.
