Greek Chickpea Stew

  1. Saute onion in hot oil in dutch oven for 5 min.
  2. Add garlic for last minute.
  3. Stir in tomatoes stock tomato paste chickpeas oregano salt and pepper.
  4. Bring to a boil reduce heat to low and simmer for 15 min.
  5. stirring occasionally.
  6. Stir in spinach and parsley, cook 5 min.
  7. Serve topped with feta cheese.
