Red Velvet Cake
- 1/2 c. shortening
- 1 tsp. cocoa
- 1 1/2 c. sugar
- 1 tsp. salt
- 1 tsp. vanilla
- 2 eggs
- 2 oz. red food coloring
- 2 1/4 c. flour
- 1 c. buttermilk
- 1 tsp. soda
- 1 tsp. vinegar
- 1 c. milk
- 4 Tbsp. flour
- 1 c. sugar
- 1 c. white shortening
- 2 tsp. vanilla
- 1 c. powdered sugar
- Mix ahead 1 teaspoon soda and 1 teaspoon vinegar.
- Beat together until very light the shortening, cocoa, sugar, salt, vanilla, eggs and food coloring.
- Add flour alternately with the buttermilk.
- Fold soda and vinegar mixture into the batter.
- Pour into three greased and floured pans.
- Bake at 350u0b0 for 30 to 35 minutes.
- Cook milk mixed gradually with 4 tablespoons flour and let cool.
- Mix sugar, shortening and 2 teaspoons vanilla.
- Add cooled mixture, one teaspoon at a time, beating into sugar and shortening.
- Add 1 cup powdered sugar.
- Spread between top of layers.
